Sr. Executive Stewarding Large Resort - Caribbean
A very large hotel in the Caribbean seeks the talents of a Sr. Chief Steward or Director of Stewarding Operations, this person manages the daily kitchen utility operations and staff for a hotel complex with over 20 F&B outlets

The Sr. Chief Steward will report to the VP of Culinary Operations and will head a team of five Chief Stewards plus the kitchen staff not engaged in cooking. The general areas of responsibilities include night cleaning, dish rooms, food running and maintenance
General Background
  • Ensures all workers have appropriate equipment, supplies and tools to perform their jobs
  • Will oversee day-to-day operations
  • Monitors material purchasing and supply inventory
  • Responsible for overall stocking of china, small ware, glass and silver for all F&B outlets and banqueting operations
  • Responsible for overall department success in the areas of finance, safety and day to day operations
  • Expertise in food safety regulations and SOP’ s
  • Supervision off all chief stewards and their team members
Background Requirements:
  • Previous experience in large volume operations with 100+ stewarding staff and facilities with over 15 F&B outlets
  • Communication and admin skills; the ideal candidate will be reporting to the VP of Culinary Operations and will seat on the Culinary Executive Committee
  • Large luxury hotel and resort operations
  • Availability within the next 30 days internationally
  • Similar tittles for this role include: Director of Stewarding, Chief Steward, Sr. Executive Steward
  • Post-secondary education or hotel and restaurant management degree
